Ingredients

  • 1 kg- premium beef mince
  • 3 cans- red kidney beans
  • 2 cans- pinto beans
  • 2tblsp - chilli powder
  • 3tblsp - ground cumin
  • 3 tsp- onion powder
  • 3 tsp- garlic powder
  • 1 tsp- cayenne powder
  • 1 tsp- black pepper
  • 1 tsp- oregano
  • 1 tsp- Table salt
  • Corn chips - we recommend cheese flavour or plain
  • Colby cheese

Steps

    Pressure cook pinto beans for 20-25 minutes.
    Mash in a pot afterwards. A good potato masher works well.

  2. 2

    Pressure cook red kidney beans for 20-25 minutes.

  3. 3

    Add all spices into a crock pot with a little canola oil. Fry at a high heat whilst stirring for about 2 minutes or you start coughing to death, whichever comes first.
    Turn heat down to medium.

  4. 4

    Add mince to spices and stir until brown.

  5. 5

    Add in mashed pinto mix. Stir into the mix

  6. 6

    Add in the steamed red kidney beans and mix.
    Add salt, mix through and taste. Keep adding salt until it tastes to your preference.

  7. 7

    Layer corn chips onto an over tray and grate a light layer of cheese.
    Oven roast at medium until cheese melts

  8. 8

    Add a layer of nacho mix on top of corn chips.
    Grate another light layer of cheese on top. Back in the oven until cheese is melted

  9. 9

    Eat. Optionally with guacamole. Or with diced avocado and cherry tomatoes on top. Or sour cream, if you're a monster
