Royal Fern Namul with a Secret Sauce

Among all of the refreshing and light namul flavors, this fern namul is relatively rich and boldy seasoned. It goes well with rice, so I love adding it to my bibimbap.

The point is to untangle the fern before simmering since they tangle so easily. If it is boiled for too long, the fern becomes fibrous, so coat it with the seasoning ingredients and then let it simmer gently. Recipe by Heartful Kitchen Rei

Ingredients

2 servings
  • 125 gramsJapanese royal fern (boiled) 'zenmai'
  • 1 cloveGarlic (grated)
  • 1 tbspSoy sauce
  • 2 tbspSake
  • 1 tbspMirin
  • 1/2 tspSugar
  • 1/2 tspBeef soup stock granules (Dashida)
  • 1 dashPepper
  • 1 tspSesame oil (finishing touch)
  • 2 tbspWater
  • 2 tspToasted sesame seeds

Steps

  1. 1

    Boil the fern, drain the water, and cut into bite-sized pieces. If making this for bibimbap, cut into short pieces so that it will blend with the rice.

    Place all of the ingredients, except for the sesame seeds and sesame oil, into a frying pan. Add the fern and mix the seasoning in well. If the fern becomes tangled at this point, untangle it piece by piece.

    Turn the heat to medium and simmer until the fern plumps up and the sauce boils down.

    Drizzle with sesame oil and sprinkle toasted sesame seeds to finish.

    This is so easy to make if you have the secret sauce! Just combine the garlic with this sauce and a little bit of water. Combine it with the fern.

    Then it's just the same as Step 3! Drizzle with sesame oil and toasted sesame seeds to finish.
