I love the combination of rice and green peas—it goes well with many dishes and is also delicious if you use red rice. This recipe makes one serving, or two smaller portions if you like to serve yourself a little and go back for seconds (like I do).

I love the combination of rice and green peas—it goes well with many dishes and is also delicious if you use red rice. This recipe makes one serving, or two smaller portions if you like to serve yourself a little and go back for seconds (like I do).

Soak the rice for about 15 minutes, then drain.

Heat the oil in a small pot over high heat.

Add the rice, spreading it out. Stir occasionally until it sounds sandy and separates easily. Add the garlic clove and salt.

Add 1 cup of water (three times the amount of rice) and the green peas.

Cover with a lid. Once it starts to boil, reduce to medium heat and cook for 20 minutes. Let it rest with the lid on for a few minutes, then serve.
