🍰 Basque Burnt Cheesecake

Always wanted to bake this simple yet firm
taste cheesecake, I found the farm shop in Somerset.
All ingredients are available at nearby Coop, and it's suprisingly easy. But, if you fancy real cheesy taste, you may want to
explore higher quality fat cheese you find in farm shops.

taste cheesecake, I found the farm shop in Somerset.
All ingredients are available at nearby Coop, and it's suprisingly easy. But, if you fancy real cheesy taste, you may want to

Steps

All ingredients to room temerature, as a first step

Preheat oven 220, in my case, and baked for 40 min. Prepare the tin covered with baking paper.

Mix the cheese and sugar.

Mix with room temperature eggs, one by one.

Add double cream, flour, vanilla beans and lemon juice. Mix lightly.

Pour the mixture into the tin

Put into the preheated oven for 40 min. 220 degree. As you will see below, I like burnt surface to enjoy the bit of bitterness.

After 40 min, in the oven it is very fluffy. Take it out from oven and cool it down so that the cake becomes more settle.
Then, put into the fridge overnight, or minimum for a few hours, to make it solid and settled.

The cake is ready!! The images look a bit burnt, but it gives a really nice flavour and extra texture to enjoy the cake.
After a day or two, even tastier, only if it last....
