Ingredients

15-20 minutes
2-3 servings
  1. 1 BunchSpinach cleaned and chopped
  2. 1 HandfulFenugreek Greens/ Methi leaves cleaned and chopped
  3. 1-2Green Chillies chopped
  4. 1Medium sized Onion chopped
  5. 1/2 tbspsGinger powder
  6. 1 tspChaat Masala powder
  7. 4-5 tbspsBesan or Chickpea flour or as needed
  8. as per tasteSalt
  9. as requiredEnough Veg oil to deep fry
  10. as requiredBlack Rock Salt (optional)
  11. as requiredGreen Chutney

Cooking Instructions

15-20 minutes

    In a big bowl, add all ingredients except salt. Mix well. The Besan should help the Methi, spinach etc. bind, there's no need to add extra water, the moisture released by methi leaves, spinach leaves, onion is enough for the Besan to moisten it and help it in binding.

    Heat the oil. Once the oil is hot to fry, add salt and mix well, this prevents further release of moisture by the leaves and onion. With the help of your fingers, drop the small dollops of the mixture into the oil and fry till its crispy and golden brown. You may make it big too. Sprinkle some black rock salt if desired and serve with green chutney or just have it like this as a side dish with rice and dal or as snacks with your evening Tea. It goes well with Murai/ Muri/ Murmure/ Puffed rice.
