Paneer Dum Biryani

Preparation of Paneer Dum Biryani:
Marinating Paneer:
First, in a large bowl, take 1/2 cup yogurt, 1 teaspoon ginger-garlic paste, turmeric, chili powder, and 1 tablespoon chickpea flour, 1 tablespoon biryani masala, and 1 teaspoon salt. - 2
Mix well and ensure the spices are well combined. Add 15 paneer cubes. Gently mix and check that everything is well combined. Cover and marinate for 30 minutes. After half an hour, fry them until golden.

Preparation of Biryani Rice:
First, in a large pot, take 6 cups of water. Add spices like 2 large cardamoms, 4 cloves, 1-inch cinnamon, 2 bay leaves, and 1/2 teaspoon black pepper. Add 1 teaspoon salt, 2 teaspoons ghee, and boil for 2 minutes or until the spices' flavor infuses into the water. Add 2 cups basmati rice and stir well. Soak the rice for at least 20 to 30 minutes. Now boil for 4 to 5 minutes or until the rice is half cooked. Do not cook completely. Drain the rice and set aside. - 4
Preparation of Paneer Biryani:
First, in a large pan, add 2 tablespoons ghee and heat. Fry bay leaf, star anise, black cardamom, mace, cardamom, and 1 teaspoon cumin seeds. Now add onions and fry until golden brown. Also, add 1 tomato and fry until it is roasted. Now add the fried paneer and mix well. Fry until the oil separates from the sides. Do not overcook the paneer. - 5
Spread the prepared rice evenly. Top with 2 tablespoons cilantro, 2 tablespoons mint, and 2 tablespoons fried onions. Add 2 tablespoons saffron milk, 1 teaspoon ghee, and 1/4 cup water. Cover with aluminum foil and close the lid. You can also use dough to seal.

Steam for 20 minutes or until the rice is fully cooked on low heat. Finally, enjoy the paneer biryani with raita and onion slices.

Gosh, so much nerves I had, I must say .With all those list of ingredients, And num of steps, trick to get the rice "right", Fhewwww...But, I can happily say, I DID IT.
