Ingredients

6 servings
  1. 800 grWhite filet fish (choose favourite)
  2. 12lasagne sheet fresh or dried
  3. 1 litersemi skimmed milk
  4. 50 grplain flower
  5. 50 grbutter
  6. 250 grunpeeled grey shrimps
  7. 800 grfrozen spinach
  8. 150 grmozzarela
  9. 100 grgrated cheese (Gouda, emmenthal, cheddar will do)
  10. 50 grpanko
  11. cubeFish stock
  12. cubeVegtable stock
  13. Star anise,bay leaf, thym, nutmeg
  14. Corn starch diluted in some water if necessary

    Peel the shrimps

    Keep the shells and flesh apart

  3. 3

    Put the herbs (except the nutmeg)in an empty teabag or tea egg.

    Put the shells in the oven for 5 minutes.

    Put the Milk in a sauspan. Put in the herbs,the shells and the fish stock cube. Bring to a simmer. Leaf it for at least 10 min or longer

    Let the milk get cold and strain it.

    Make a roux with the butter and the flower. Add the cold milk by bits. Let it cook for a few minutes until the sauce tickens. Add salt, white pepper and nutmeg.
    When needed add cornstarch. you need a thick sauce

    Heat up the frozen spinach add a veg stock cube and some salt, pepper and nutmeg.

    Cut the fish in stripes you need a sharp knife. If you use frozen fish it is easier. Let in semi defrost.you can cut it much finer.

    Take a large oven container. First put a layer of sauce.then lasagne sheets. Half the spinach. Then the fish. Lasagne sheets.more spinach. Sheets. As long as youre last layer is sauce it is good.

    Cover the sauce with mozzarella,cheese and panko

    Put in a medium heat oven until the lasagne is bubbling and the top is melted(25 min).

    Let it cool a bit before serving. You can cut it much easier.

    Slice in to 6 pieces

    Put the shrimps on top and serve.
