The star here is the tomato—delicious! I really liked how these turned out. Super easy, with just a few ingredients.

Wash and hollow out the tomatoes, removing the seeds and pulp. Set the pulp aside. Chop the onion and add it to a skillet with a drizzle of oil. Add the garlic and cook until the onion is translucent. Place the hollowed tomatoes in a baking dish and bake at 350°F (180°C) for 20 minutes.

Add the ground beef to the skillet, season with salt and pepper, and add the reserved tomato pulp. Cook until the liquid reduces. Remove from heat and fill the tomatoes with the beef mixture.

Top each tomato with creamy cheese or your favorite cheese, and sprinkle with a little parsley. Return to the oven for another 10 minutes, until the cheese melts. Remove from the oven when done.

For a delicious finish, serve with a salad of arugula, lettuce, tomato, and onion. Super easy and, above all, delicious.
