Preheat oven to 200C

Wash and dry potatoes then cut into wedges.

Drizzle enough oil to coat potatoes and sprinkle herbs and seasoning. Give a thorough mix then arrange the potatoes on a baking tray with skin side facing down

Bake potatoes for 30 - 35 minutes or until they are cooked and with crispy edges

Wedges can be enjoyed with any side and a dipping sauce
