This is one of the most popular and commonly made rice recipe from the South Indian cuisine. Lemon rice is also known as" Chitranna" or "Nimmakaya Pulihona". It is a flavourful and tangy dish that is easy to make and tastes so good. Lemon juice fried nuts , aromatic herbs and spices combine perfectly to give this steamed rice an amazing spicy, tangy and nutty flavour.

This is one of the most popular and commonly made rice recipe from the South Indian cuisine. Lemon rice is also known as" Chitranna" or "Nimmakaya Pulihona". It is a flavourful and tangy dish that is easy to make and tastes so good. Lemon juice fried nuts , aromatic herbs and spices combine perfectly to give this steamed rice an amazing spicy, tangy and nutty flavour.
Steps

Wash rice few times and drained the water completely.
On low flame cook it in a large pot with 2 liter water. The rice must be cooked fully but grainy and not mushy. Place the cooked rice in a tray or bowl to cool it. - 2
In a small pan heat 2 tbsp oil first fry the peanuts until crunchy and then set them aside. In the same oil then fry cashew nuts until golden. Remove and set aside.

Now add 2 tbsp oil in the same pan. Keep the flame low. Add mustard seeds, cumin seeds and dried red chillies. Once it splitter add both daals and fry it till it starts becoming changes the colour.

Add curry leaves, slit green chillies and hing. Mix it. Add the fried peanut and cashew nuts too. Add turmeric powder and salt. Cook for a minute. Then add cooked rice. Mix well and cook for a minute.

Switch off the flame, add lemon juice. Mix well. Serve it hot.
