Gingerbread biscuits

I got a book full of Christmas baking recipes about 8 years ago, and my absolute favourite one in that book was this. Gingerbread (in Swedish 'pepper biscuits') is a very traditional thing for us to have for advent, and since the first advent of this year is on this Sunday I thought now would be a good time to share this lovely recipe.

Mix sugar, golden suryp, coffee and spices in a saucepan and bring to a boil. Take off the heat, add butter and stir until it's fully combined.

Add orange peel and let the mixture cool down until it's nice and creamy.

Mix flour and baking soda and add to your spiced sugar and butter mix. Bring it together to a nice dough (you'll need to use your hands) and wrap it up in some cling film. Let it rest in the fridge overnight, or preferably a bit longer, taste develops more over time!

Roll the dough out thinly and cut shapes out with a cookie cutter. Bake in the oven at 200 degrees for 8-10 minutes.

Note:
This recipe makes about 120 biscuits, but the dough will be fine in the fridge throughout all of December, so no need to use it all at once.
Also perfect for making gingerbread houses 🥰
