Veggie Broth and Beet Potage

When I went to Russia on a language study program when I was in university, I tried many kinds of щи (soup). Authentic borscht was especially delicious. This time, I made it healthy by using veggie broth and soy milk.
Steam cooking the vegetables brings out the sweetness.
Cook the beets well, until tender.
The veggie broth mellows the earthy smell of the beets. Recipe by Shijimigohan

Ultimate Veggie Broth Ultimate Veggie Broth
I thought up a simple and delicious stock recipe.Any vegetables are fine - daikon radish, carrots, onion peels, spinach and mizuna roots, broccoli stems, the outer leaves of lettuce and cabbage, etc. But try to limit yourself to vegetables only, and avoid using animal proteins.Depending on the kind of vegetable scraps you use the taste of this stock will change, meaning you get to experience a new flavour every time. #zerowaste vegetable broth #zerowaste vegetable broth
I've been saving and freezing all my veggie scraps from cooking preparation for the past couple of months. Instead of throwing to the garbage the carrot & onion peels or bell pepper & zucchini stems, I put them in a large ziploc bag in my freezer. When the bag is full, or when you have no more room in your freezer because you've cumulated too many ziploc bags, it's time to make your broth! 😄😄 All veggie scraps are good to go in except for potato peels. Of course you, have to wash thoroughly your veggies if you want to do this, even if you eat organic. mfno -
Broccoli Stem Potage Broccoli Stem Potage
The stem of a head of broccoli I bought were so thick and grand.Usually I peel, slice thinly and boil them or something, but I thought I'd try making a soup out of them.It depends on the broccoli you have, but the thick stems are fibrous, so you need to peel them thickly or the soup may be grainy. The stems I used this time weighed more than 300 g.If you add the green parts of the broccoli too, the soup will be brighter in color. I used the stems only this time, so the soup is just a very light green. Recipe by Junchan cookpad.japan -

Zero waste veggie broth Zero waste veggie broth
This veggie broth can be made from kitchen scraps; potato peels (not too many, onion, mushroom, peppers, jalapeño (if you like it spicy), garlic, thyme, etc. As you cut your veggies instead of throwing the scraps away, place them in a ziplock bag or freezer bag.You do not want to add broccoli, cabbage, kale or collard greens. You do not want to heavily season it because you can adjust flavor to what you are making. #GoldenApronWeek7 Elyse Rose -

Carrot & Coconut Milk Curry Potage Carrot & Coconut Milk Curry Potage
When I make carrot potage, I also season with cumin. That was my standard carrot soup, but I wanted to change it a bit and tried different things. I finally settled on this delicious recipe. If everyone likes coconut, this is great for anyone from kids to adults.Adjust the amount of curry powder depending on the taste and flavor of the powder you use. The grated ginger brings out the flavor of the coconut milk. I always add it when making a coconut-milk flavored potage, but it's optional. Recipe by milketmoi cookpad.japan
