Ingredients

  1. 500 gramschicken mince
  2. 2 clovegarlic, crushed
  3. 1 stalklemon grass, chopped
  4. 1 smallknob ginger, grated
  5. 1 eachgreen and red chillies, diced
  6. 227 gramstin water chestnuts, diced
  7. 1 smallamount vermicelli, cooked to packet directions
  8. 2limes, juiced
  9. 6 tbspfish sauce
  10. 6 tbspvinegar
  11. 4 tbspbrown sugar
  12. 1/2 smallred capsicum, thinly sliced
  13. 1/2spanish onion, thinly sliced
  14. 1/4 cupmint, roughly chopped
  15. 1/4 cupcoriander, roughly chopped
  16. 1ice berg or baby cos lettuce
  17. 1 smallsplash peanut oil

Steps

  1. 1

    Brown mince in peanut oil with garlic, lemongrass and ginger

  2. 2

    Once browned, add lime, vinegar and fish sauce, adding more to taste if needed. Simmer for 3 minutes

  3. 3

    Turn off heat and stir through water chestnuts, vermicelli cut into small strands, capsicum, spanish onion and herbs

  4. 4

    Rest for 5 minutes, seperate lettuce leaves and serve larb on top of lettuce.

  5. 5

    Serve with rice

Whoever taught u or feed you this recipe must be punished by Thai Criminal Court.Simple recipe,chicken shud look white not brown.Keeep it simple and authentic.
