Saute Bacon over medium until browned, add Butter, Onions , Celery, cook for 5 min until soft. Add Garlic & Thyme, cook further 2 min. Add Flour, cook string for 2 min.

Gradually stir in stock, bring to boil. Reduce heat, simmer until thick.

Remove from heat, cool slightly, then stir in sweet corn, Seafood, & Chives.

Transfer mixture to pie dish, cover & refrigerate until cold.

Pre heat oven to 180° . Cover with pastry, brush with egg, bake 30 min.
