Phulka, roti or chapati: no meal in India is complete without this flatbread. It is much as table essential as rice. Traditionally Roti’s are cooked on an iron skillet and later put on direct flame for it to rise and puff.
Though it is the matter of practice you will be able to make a perfect shape and perfect soft roti. Smear it with ghee or without ghee, and eat with your favourite dal or sabji.

First step is to knead a dough. For this take flour in a deep mixing bowl. Add salt as per taste. It's totally optional to add salt. Now add little by little water and start kneading. Keep kneading the flour very well as the more you knead the more the dough become soft but not sticky. Smear some ghee to the dough and then knead well for 4-5 minutes. Now keep it covered for 10 minutes.

Now divide the dough into 8 equal parts.

Take one part. Roll it into the flour and flatten it.

Place it in the center of the rolling board.

Gently press the dough ball to flatten it and then roll it back and forth using a rolling pin, using gentle pressure. Turn the roti around clockwise a few times, as you roll it evenly on all the sides. Dip it back in flour if it starts to get sticky and form 6 to 8 inch roti

Place a tawa on a gas. Gently place the rolled roti on the preheated Tawa and cook for 30 to 45 seconds. Then flip the roti over with a pair of tongs and allow the side touching the tawa to fully cook. About a minute or so, or until the roti starts to get light brown spots over.

Now carefully lift the tawa with one hand (non dominant) and pick up the Roti using the pair of tongs and place it upside down on medium high flame. The Roti will start to pop up, getting brown spots on it, about 20 to 30 seconds. Place the roti in a plate facing up the side that just cooked directly on the flame. Place the tawa back on the flame. Optionally apply ghee or oil, on the top surface of the Roti.

Repeat with same steps with other dough ball.
