Prepare all the ingredients.

Top each slice of pork with a slice of prosciutto and a sage leaf. Secure with toothpicks. Dredge the prepared pork slices lightly in flour.

Melt the butter with a drizzle of olive oil in a skillet. Sear the pork slices until golden, then deglaze with white wine. Cook for 10 minutes, then season with salt (optional) and black pepper.

Plate and serve.
