Roasted Tuna Stuffing in a Tomato

A twist on the cold version. Just add breadcrumbs.

Ingredients

  1. 7medium vine ripened tomatoes
  2. 1 cupplain breadcrumbs panko
  3. 25 ouncescanned tuna
  4. 1 tablespoonsDijon stoneground mustard
  5. 1 cupmayonnaise
  6. To taste salt
  7. To taste ground black pepper
  8. 1small onion diced
  9. 2 tablespoonsground Spanish paprika

Cooking Instructions

    Remove vines and wash tomatoes. Preheat oven 400° Fahrenheit.

    Cut the tomatoes in half across the middle. Scoop out the center with a spoon and put into a bowl. Set the hollowed parts on a baking sheet.

    Add the mayonnaise, mustard, tuna, and breadcrumbs.

    Dice the onions and spices. Mix well. Add stuffing into the hollowed out tomatoes. Set into oven for 20-25 minutes. Allow to rest 12 minutes serve. I hope you enjoy!!
