Italian Sausage & Rice Stuffing

This recipe is very versatile. ..can be used as a stuffing for a chicken or Turkey or made in a tray as a side dish ...u can stuff a pepper..porta balla mushroom or zucchini. ...the chicken stock & grated cheese absorbs into the rice for great flavor!!!!!
For a delicious veggie version do not add sausage & pancetta & use veggie stock & its still great!

Cooking Instructions

cook rice w water & set aside & let cool

cook ground sausage in pot & set aside leave oil drippins & set aside

dice pancetta & cook in oil drippins of sausage & set aside

dice onion & chop mushrooms & cook in pot with oil drippins

combine all ingredients in pot...add chicken stock ...grated cheese..& spices & mix

this stuffing can be used as a side dish ..to stuff a turkey or chicken..to stuff a pepper or porta bella mushroom

stuff or place in baking tray & cook in oven until top of rice starts to brown at 350º

I love stuffing. It is my favorite part of any holiday meal. When I was younger, my mom would make extra stuffing, because she knew how much I loved it.People have come close to hers, but none can top her stuffing. Not saying that no one else makes good stuffing, but to me hers was the best. I wish that she still made it, but after cooking for 6 children and 11 grandchildren, she is done cooking My mother-in-law is a close second. Both of stuffings are basic. Bread, sausage, with herbs & spices.This stuffing is very close, but I added Italian sausage and cranberries. Why? The better question is why have I not done it sooner? I hope you like it as much as my family and friends do.As for the Stuffing vs. Dressing debate, here is my stance. Does it really matter? If you really like it, then it should not matter.
