Ingredients

Prep 25 minutes,Bake 30 minutes..
8-10 servings
  1. 16 cupswhite or sourdough bread cut in 1” cubes (1 1/2 pound loaf)
  2. 8 tablespoonsunsalted butter (1stick)
  3. 2 cupsdiced yellow onion
  4. 1 cupmedium diced celery
  5. 2Granny Smith apples, unpeeled, cored and large diced
  6. 2 tablespoonsflat leaf parsley
  7. 1 tablespoonkosher salt
  8. 1 teaspoonground black pepper
  9. 3/4 poundsweet or spicy Italian sausages (casing removed)
  10. 1 cupchicken stock
  11. 1 cupdried cranberries

Cooking Instructions

Prep 25 minutes,Bake 30 minutes..

    Preheat oven to 300 degrees Fahrenheit.

    Place bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temp to 350 degrees Fahrenheit. Put bread cubes in a very large bowl.

    In a large skillet, melt the butter and add the onions, celery, apple, parsley, salt and pepper. Sauté over medium heat 10 minutes, until vegetables are softened. Add to the bread cubes.

    In same pan, cook the sausage over medium heat for 10 minutes, until browned and cooked thru breaking the sausage while cooking. Add to bread cubes and vegetables.

    Add chicken stock and cranberries to the mixture, mix well, and put in a 9 x 13 baking dish. Bake for 30 minutes, until browned on the top and hot in the middle. Serve warm.
