Rava paniyarams or appe are one of my personal favorites for breakfast, and with winter veggies available in their utmost glory, I decided to give a earthy twist to my paniyarams with the addition of freshly grated beetroot and a nutty and crunchy twist with walnuts

Rava paniyarams or appe are one of my personal favorites for breakfast, and with winter veggies available in their utmost glory, I decided to give a earthy twist to my paniyarams with the addition of freshly grated beetroot and a nutty and crunchy twist with walnuts

Combine sooji, salt and buttermilk in a bowl.

Add chopped green chilli and grated beetroot to it.

Add walnuts and baking soda and mix.

Let it rest for a few mins.

Pour the batter in the appe pan. Cover with lid and cook for 2-3 mins on low flame. Low flame is key to keep the colour intact.

Flip and cook on the other side on low flame.

Your puffy, red, healthy and crunchy appe are ready to be served.

Serve hot with coconut chutney.

PS: In place of baking soda, you can even use fruit salt(eno).
