Ingredients

60 minutes
  1. For soaking dried fruits
  2. 3 tablespoonsblack raisins
  3. 3 tablespoonsdried cranberries
  4. 3 tablespoonscandied fruit (tutti frutti)
  5. 3 tablespoonschopped cashews
  6. 3 tablespoonschopped almonds
  7. 3 tablespoonsgolden raisins
  8. 6 tablespoonsorange juice
  9. Caramel
  10. 6 tablespoonssugar
  11. 4 tablespoonshot water
  12. For the cake batter
  13. 2 cupsall-purpose flour (about 250 grams)
  14. 1/2 cuppowdered sugar (about 60 grams)
  15. 1 tablespoondrinking chocolate powder
  16. 1/4 teaspoonbaking soda
  17. 1 teaspoonbaking powder
  18. 1/2 teaspoonnutmeg powder
  19. 1/2 teaspooncinnamon powder
  20. 1/4 teaspoonground ginger
  21. 1 cupmilk (about 240 ml)
  22. 6 tablespoonsoil
  23. 1 teaspoonvanilla extract
  24. 2 teaspoonsvinegar
  25. Dried fruits as needed, for topping

    First, in a glass jar, combine black raisins, cranberries, candied fruit, cashews, almonds, and golden raisins. Add orange juice, mix well, and let soak for at least 1 hour.

    To make the caramel, add sugar to a pan and melt over medium heat. Once the sugar melts and turns brown, lower the heat and add hot water. Mix well and transfer to a bowl.

    Add salt to a deep pan (kadhai), cover, and preheat. Grease a cake pan and line it with parchment paper on all sides.

    Sift the dry ingredients—flour, drinking chocolate powder, baking powder, baking soda, and powdered sugar—onto a plate using a sieve.

    In a large glass bowl, mix together milk, oil, vanilla extract, nutmeg powder, cinnamon powder, and ground ginger.

    Once combined, add the sifted dry ingredients and mix well. Add the caramel and mix again. Add the soaked dried fruits and gently fold them in. Add vinegar and mix just until combined. Pour the batter into the prepared cake pan and tap to level the surface.

    Place the cake pan on a stand inside the preheated deep pan (kadhai) and cover. Bake on medium heat for 15 minutes, then reduce to low heat. The cake will take about 55 minutes to bake. Check with a toothpick to see if it’s done. Once cooled, slice and serve.
