Ingredients

12 cookies
  1. 1 packageBetty crocker oatmeal cookie mix(17.5 oz)
  2. 1 stickunsalted butter
  3. 2cap-fulls almond extract(imitation works)
  4. Cold water
  5. Handful(or more) chopped walnuts
  6. 1egg(or a chia/flax egg)
    Flax seeds egg substitute
  7. 1 tspvanilla flavored dry creamer/ dry milk and vanilla extract

    Prepare the egg of choice

  2. 2

    Microwave one stick of butter just long enough for some of it to fully melt and the majority of it to become soft(around 30 secs in 700 watt microwave)

  3. 3

    Combine egg, butter(once cooled a bit to not scramble the egg), almond extract, walnuts, and dry creamer/milk

  4. 4

    Empty package into big bowl and fold into wet ingredients just enough to combine. Add small amounts of cold water(keep the butter cool and not scramble the egg) until just combined

  5. 5

    Let mixture sit for 10 minutes-up to overnight(in fridge) to allow for the oats and flour to hydrate

  6. 6

    Portion onto greased baking sheet and bake at 350 degrees for around 10 mins depending on size of cookies

  7. 7

    Let cool and enjoy!

Tips

Flax seeds egg substitute

1 Tbsp flaxseed meal (ground raw flaxseed)2 1/2 Tbsp waterInstructions:Add flaxseed meal and water to a dish and stir. Let rest for 5 minutes to thicken. Add to recipes in place of 1 egg (as original recipe is written).
