Beet Pav Bhaji

Pav Bhaji with just a little extra addition of Beetroot along with the other Vegetables. The only difference being that I didn't add the pulp or the grated Beet. Instead I added it chopped into pieces just like other Vegetables and then mashed everything together.
Popular street food of Mumbai and equally popular with my folks here as well. It's a regular feature on my menu. An excellent option for anytime. It can be enjoyed with lots of Butter, with some Lemon juice squeezed out and alongside some chopped Onions. It's a delicious streetfood that is easily made at home and enjoyed by many across the Country. My family enjoys it for dinner mostly when all the members are available and therefore it's a yummy treat that's served for all. And is the first choice always for my people. I have used favourite Vegetables of my choice for this yummy street food of Mumbai. You can add or remove any of the Vegetables of your family's choice and preference. This is a favourite go to Snack at tea-time for me.

Heat Butter and Oil in a pressure cooker. Add Garlic mince along with the chopped Onions. Saute until light pink and translucent. Add the veggies one by one. Stir in for a while. Pop in the chopped Tomatoes at the end. Add all the spices along with the Pav Bhaji masala and saute for 3 to 4 minutes.

Add a cup of water and pressure cook on a high heat for 5-6 whistles. Let the pressure settle down on it's own before opening the lid. Mash all the Vegetables well. Adjust Salt and add more of Butter too. Garnish with chopped Coriander Leaves and serve hot with a generous dollop of Butter.

Enjoy with your loved ones on any day for a yummy Snacking time or even for Dinner just like I did. It's a perfect Brunch idea too. It's a lovely fusion of beautiful array of Vegetables in myriad colours and hue. Happy Eating!
