Fantastic and speedy mid week meal! I’ve made this delicious veggie dish for my what’s cooking Wednesday feature on BBC RADIO DERBY tomorrow at 3.15 pm

In a large frying pan or wok add some oil and heat to a medium temperature. Add the onion and garlic and fry.

Take the two packets of rice and give them a bash to release the grains, pour into the onion and garlic, add a tablespoon of oil coating them well, throw in the tomatoes.

Take the peppers slice and add them, the tinned tomatoes and stock, let it bubble away until the liquid is absorbed. Season well!

Mix the pesto in a small bowl with 2 tablespoon of oil so you can drizzle it on once it’s cooked.

Shred the basil and grate the cheese! Simply serve in a large bowl ! Enjoy
