My dad LOVES Peanut Brittle. So, since my mom passed, he hasn’t had any “homemade from scratch”, he doesn’t care for the ‘store bought stuff’. He said, it’s okay for the folks that don’t know the difference. The stinker! So, I set off to find a good recipe and stumbled across this one. It passed with flying colors. I hope y’all enjoy it as much as he has.

Ingredients

  • 1-1/2 cupsdry roasted peanuts
  • 1/2 cupclear Karo syrup
  • 1 tbsp.butter
  • 1 tsp.baking soda
  • 1 cupgranulated sugar
  • 1 pinchsalt
  • 1 tsp.vanilla

Steps

    Grease baking sheet. (I was showing off my new cookie sheet by picking up the brittle after it hardened showing that it didn’t stick.)

    In micro safe glass bowl: mix peanuts, sugar, Karo, & salt.

  3. 3

    Micro 6-7 minutes on high. Mixture will be bubbly and peanuts browned.

  4. 4

    Stir in butter and vanilla, micro 2-3 minutes longer.

  5. 5

    Quickly stir in soda, just until mixture is foamy.

  6. 6

    Pour immediately onto prepared pan and spread out.

  7. 7

    Let cool 15 minutes or until set. Break into pieces before serving. Store in airtight container.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
