First, rinse the rice and soak it in water for 30 minutes. After 30 minutes, drain the water from the rice.

Heat the ghee in a large pan. Add cumin seeds and bay leaves, and sauté. Then add all the whole spices and sauté until fragrant. Add the green peas and mix well.

Add the rice and sauté for 2 minutes. Then add salt and water, cover with a lid.

Cook on low heat for 15 to 20 minutes, stirring occasionally. Once the rice is cooked, turn off the heat.

In a small bowl, mix a teaspoon of milk or water with a pinch of orange food color. Drizzle this over the rice in spots. Matar Pulao is ready to serve.
