Adobe pork taco's
This recipe serves about 10 taco's.
Steps

Place the pineapple and pork belly in a deep oven tray.
Blend all the other ingredients in a blender, including the juice in the can of pineapples. Toss this mixture with the pork belly and pineapples. Feel free to rinse the blender with some water to get everything out. - 2
Place the tray in a 150C oven uncovered for at least four hours. Or until the sauce turns nice and dark and with a thick consistency. Stir/toss regularly when the sauce gets thicker. If the sauce thickens up too quick, add water and/or cover the tray with foil.

Use a taco press or a heavy pan to press a portion into a taco. Cook the taco on first side for about 90 seconds. Flip, Cook it again for about 90 seconds. Flip and press, and cook for about 60 seconds. The taco should puf up. And one more flip and press, and cook for 60 seconds.
Stack the finished taco's in a kitchen towel to keep warm, steamy and pliable. - 4
Reheat the taco's briefly. Top with the pork and toppings.
