Quick fakeaway Shortcrust pizza

Ingredients

15 minutes
  1. 1 sheetshortcrust pastry
  2. 3eggs
  3. Halfbell pepper
  4. Cheddar cheese
  5. 1gherkin
  6. 3 rashersbacon
  7. HalfOnion (pickled or raw)
  8. 3sun-dried tomatoes

Cooking Instructions

15 minutes

    Roll out the shortcrust pastry sheet onto parchment paper on a baking tray

  2. 2

    Using a knife score a "boarder" roughly half an inch around. Do not cut all the way through, only lightly score a line.

    Start adding fillings of your choice in the centre up to the score line. Dice bacon, bell pepper and gherkin and evenly spread over. Add sun dried tomatoes and finely sliced onion. I used leftover pickled onions here but normal onion works perfectly.

    Cover with grated cheese.

    Make three small "wells" down the middle for the eggs. Carefully add only two of the eggs into each of their "wells".

    Separate the third egg into yolk and white and use the white to completely brush the edges of your pastry. Once the pastry is brushed place the leftover white and yolk into the third well.

    Bake in a preheated oven at 180c for 15 minutes. Enjoy.
