Ingredients

Overnight and 14 minutes
2 people
  1. 1pork steak, two pounds
  2. 2 Tspachiote paste
  3. 1 cuporange juice
  4. 1sliced meyer lemon
  5. 4 Tbstequila
  6. 2tortillas
  7. 1Roma tomato
  8. 1small mexican green onion
  9. 1spray olive oil
  10. Equipment: quart freezer bag, cast iron skillet, olive oil sprayer
  11. Cost: pork steak $3, marinade 50 cents, other 50 cents, tortilla, fruit salad $1, $2.50 dinner per person

Steps

Overnight and 14 minutes
  1. 1

    Mix home made or store bought achiote paste, orange juice, sliced lemon and tequila, mix in quart size freezer bag with pork steak. Marinade in fridge overnight.

    Sear achiote rubbed marinaded pork steak in hot cast iron skillet sprayed with olive oil till juice runs clear from top of steak, about 3 minutes per side.

    Slice marinaded seared pork steak across the grain in thin strips. Place back in pan, cover with left over marinade, simmer till pork is cooked, lay over thin sliced fresh tomato and Mexican onion, pork strips on top of handmade tortilla.

    Serve with mixed fruit salad sprinkled with lemon juice to prevent discoloration. Enjoy.
