Ingredients

1.5 hours
5 to 6 person
  • 3 cupsfine rice powder
  • Halffresh coconut grated
  • 1 tbspghee
  • as required Jaggery (same quantity as coconut)
  • as required Elaichi/Cardamom powder
  • as required Warm water for kneeding the dough
  • as tasteSome salt

Steps

    First heat a kadai & add ghee to it. Then add freshly grated coconut. Now add jaggery to it. You can even grate the jaggery first then add it.

    Keep the flame low and give it a good mix. Keep mixing by breaking the jaggery lumps & keep stirring continuously so that the the jaggery doesn't gets burn from down part of the kadai.

    Now add elaichi powder to it and mix it well. Keep stirring, until oil starts releasing from the mixture & the mixture starts leaving the pan. It will now start becoming lumpy. Don't make the consistency too lumpy or else it would harden completely after some time. Just keep the consistency little loose as we prepare in ukadiche modak.

    In a bowl add the rice flour first. Then add a little salt and mix it. Then add little warm water, mix it with a spoon. Now cover it and leave it as it is for about 15 mins.

    Now if needed, add a little water and knead a soft dough. Now cover the dough and let it rest for about 15 mins.

    Now make small balls from the dough and fill each one of it with a tsp of coconut filling prepared above. Now fold it in a triangular shape, as shown below. Repeat the same process with the rest of the balls and make the pithes.

    Now place the pithes over a strainer and steam the pithe-dumplings using double-boiler method I.e boil some water in a big bowl then place the strainer filled with dumplings over it & cover it. Keep the flame low and steam it for about half an hour.

    After half an hour, just switch off the flame, remove the pithe-dumplings over a platter. Let it come to room temperature then enjoy this authentic sweet rice dumplings (Bhapa Pithe) with date molasses (liquidified date-palm jaggery).
