Edamame Lemon Pasta

A quick and light pasta with refreshing lemon 🍋
I recommend using Parmesan grated from a block of cheese since the pre-grated ones contain starch to prevent caking, but this can make the sauce a little clumpy. If that’s all you have though, it’ll still taste good.

If the edamame is frozen, boil it for 5 minutes and drain. Zest and juice half a lemon. Grate the Parmesan.

Boil pasta according to directions. Before draining, set aside 1/4 cup of the water from boiling pasta, then drain.

In a sauce pan or shallow pot, add lemon juice, lemon zest, olive oil, and water from pasta. Turn on medium heat. When it simmers, add 1/4 cup Parmesan and mix well.

Add in the edamame and pasta, and sprinkle with salt and pepper. Stir together everything well.

Dish out to your plates and garnish with more Parmesan and parsley. Add salt and pepper to taste.
