Ingredients

30 minutes
3-4 people
  • Chilli (separate recipe)
  • 1large bag of tortilla chips
  • Jalapeño peppers, sliced
  • Cheddar cheese, grated
  • Fresh coriander
  • Salsa
  • 4tomatoes
  • 4spring onions
  • Chunk of cucumber
  • Halfa red or yellow pepper
  • 1 tbspred or white wine vinegar
  • 1lime
  • Fresh basil
  • 1-2fresh red chillies

Steps

30 minutes
  1. 1

    Heat the oven to 180 degrees

  2. 2

    Form a layer of tortilla chips on the bottom of an oven dish

  3. 3

    Heat in the oven for 15 minutes

  4. 4

    Cover the tortilla chips with the chilli and jalapeño peppers

  5. 5

    Add the rest of the tortilla chips around the sides of the dish and scatter grated cheese over the top

    Bake for 20 minutes until the tortilla chips turn brown

    Scatter with fresh coriander and serve with salsa (see below), guacamole and crème fraiche.

    For the salsa:
    Finely chop all the veg into small pieces. With the cucumber remove the middle section of seeds

  9. 9

    Put into a bowl, squeeze in the lime juice, add the wine vinegar, stir and add the chopped basil leaves.
