A rich tasty mushroom sauce with a veal scallopini makes for an elegant meal. The only thing is to make sure your veal is tender. If it’s veal round I like to use a bladed tenderizer as it makes for a big difference.

Ingredients

20 minutes
2-3 servings
  1. 1 poundveal round steak thin sliced
  2. Flour seasoned with Sriracha, pepper, salt, and Parmesan cheese for dredging
  3. Olive oil and butter for sautéing
  4. 1shallot finely chopped
  5. 1jalapeños finely chopped
  6. 8 ozsliced mushrooms
  7. 1 clovegarlic minced
  8. 1/3 cupbrandy
  9. 1 cupbeef broth
  10. 1 Tbsplemon juice
  11. 1 TbspDijon mustard
  12. 2 Tbspsour cream
  13. 1/4 cupheavy cream
  14. 4 Tbspcold butter cut into pieces
  15. If needed for thickening: 1 tsp corn starch mixed with 1 tsp cold beef broth
  16. Chopped parsley and chives for garnish

Cooking Instructions

    Pound veal with a tenderizer. If you don’t have one you can use a regular pounder but it will not be as tender. Pork or chicken can be used also and if you can get veal tenderloin it’s the best but it’s hard to find. Lightly coat veal with seasoned flour mixture. Heat oil and butter in a skillet until hot and brown veal on both sides. Remove to plate when done.

    Add mushrooms, jalapeño, and shallots to skillet and cook just until tender adding more oil if needed. Add garlic and cook for 30 seconds. Off heat add Brandy and ignite. Be careful, the flames can get high. When flames die out put back on heat.

    Add beef broth, heavy cream, sour cream, mustard, and lemon. Bring to a simmer and cook 5 minutes. Add corn starch mixture and mix in. Add butter and whisk in. If you want to thicken it more add corn starch mixture.

    Pour mushroom sauce over veal and garnish with parsley and green onions and serve. Enjoy.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site.
