Preparation time-10 mins, Cooking time-20 mins

1 cupcooked rice
1.5 cupsthick curd
1large cucumber
1 sprigcurry leaves
1 sprigcoriander leaves
1/2 tspmustard seeds
1 TbspUrad Dal
1large carrot
as required Star anise
As per taste Salt
As requiredOil

Preparation time-10 mins, Cooking time-20 mins

In a pan heat oil, add mustard seeds, Urad Dal, curry leaves and sauté for 1 min

Add cooked Rice, curd, chopped coriander leaves and salt and mix well. Set aside

On a plate place cucumber sliced lengthwise, place the rice, place few more cucumber slices breadthwise to cover

Peel and cut the carrots to your choice of shape and place on the cucumber curd rice, place a star anise
