
Sponge Cake
A fluffy sponge for lamingtons (or anything, really).
Steps

Use a stand mixer to mix eggs with salt until frothy/foamy (about 1 minute)

Add sugar gradually (and remember to mix well).

Keep mixing for about 5 minutes until the mixture is very fluffy and white
- 4
Sift the flour (and baking powder, if you want) into the egg mixture and fold through GENTLY

Tip melted butter in and combine well.

Now pour mixture into a lined cake tin (any shape will do).

Bake for around 25 to 30 minutes until golden at 180 degrees (OR, you could do the skewer test (I have a tip for that)

Leave to cool and you now have a FRUITALICIOUS (which means juiced up with super greatness) sponge cake.

You can also slice the cake in half and spread 1 half with jam and the other with cream and push it together to serve.
