Ingredients

30 minutes
4 people
  1. 10prawns; peeled; head reserved
  2. 250 mlwater
  3. 8 stalkslemongrass; chunked
  4. 15 slicesgalangal
  5. 20Kaffir lime leaves
  6. 4shallots; finely chopped
  7. 2chili; pitted
  8. 2tomatoes; quatered
  9. Fish sauce
  10. Lime juice
  11. Coconut milk

30 minutes

    Prepare cooked spaghetti

  2. 2

    Panfry prawn heads until golden, followed by shallots

  3. 3

    Add 250ml cold water, lemongrass, galangal, Kaffir lime leaves, chili and boil the sauce

  4. 4

    Cook the sauce for 2 minutes with medium-low heat

  5. 5

    Remove residue from the sauce

  6. 6

    Add tomato, 2 teaspoon fishsauce, 2 teaspoon sugar and 0.5 teaspoon salt

  7. 7

    Add coconut milk, lime juice and mix well

  8. 8

    Panfry prawn meat to medium done and put aside

  9. 9

    Mix the sauce with spaghetti and mix well
