Ingredients

30-40 minutes
8 people
  1. 2 lbssweet potatoes
  2. 3 1/2 cupswater
  3. 1 1/2 cupssugar
  4. 3 TBflour
  5. 1/2 tspcinnamon
  6. 1 TBvanilla extract
  7. 3/4 cupbutter or margarine

Steps

30-40 minutes
  1. 1

    Choose your crust, but I went with Filo for the top crust.

  2. 2

    Peel and slice potatoes 1/4 inch thick
    Cook sweet potatoes in the 3 1/2 cups of water. When done reserve the water from potatoes for later.

  3. 3

    Layer potatoes in a well greased pan. Add in reserved liquid.

  4. 4

    Combine sugar cinnamon flour in a bowl. Mix well. Sprinkle over potatoes.

  5. 5

    Dot with butter, cover with pastry. Sprinkle with cinnamon and sugar.
    Cook and enjoy!
