Surti Papdi Nu Shak (Sem / Broad bean Subji)

There are many types of broad beans/ papdi available during winter season in Gujarat. Surti papdi is one of my favourites. It is really delicious when cooked with eggplants. This vegetable can be served with roti, Gujarati kadhi and rice. This is a very tasty subji which can be prepared using very little ingredients and it is cooked really quickly in a pressure cooker.

Ingredients

  • 500 gramsurti papdi
  • 250 grambrinjal /eggplant
  • 4 tbspoil
  • 1/2 tspmustard seeds
  • 1/2 tspcarom seeds
  • 1/4 tsphing /asafoetida
  • 1/2 tbspginger paste
  • 1 tbspgarlic paste
  • 1/2 tspturmeric
  • 2 tspred chilli powder
  • 1 tbspcoriander cumin powder
  • 1 tspgaram masala
  • Salt to taste
  • 1/2 cupwater
  • 2 tbspcoriander leaves
  • 1 tbspfresh green garlic

Steps

  1. 1

    First of all clean papdi. Remove seeds from the papdi with hard skin and just string the tender ones. Wash it properly. Cut brinjal /eggplant into big pieces.

  2. 2

    Heat oil in a pressure cooker and add mustard seeds. When it crackles add carom seeds and hing to it along with ginger and garlic paste. Saute it on medium heat for a minute. Now add turmeric, red chilli powder, salt, coriander cumin powder and garam masala to it and mix everything well.

  3. 3

    Add papdi and brinjal to it and mix it well. Add half cup water to it. Cover the lid and cook it on medium heat until 2 - 3 whistles. Let the pressure come down itself.

  4. 4

    Add coriander leaves and fresh green garlic to the prepared vegetable. Surti papdi and eggplant vegetable taste really delicious served with roti, Gujarati kadhi and rice.
