Make the vanilla muffins: In a bowl, beat the eggs with the sugar using an electric mixer until the mixture is light and fluffy.

Add the oil, milk, and vanilla extract.

In another small bowl, combine the flour, baking powder, baking soda, and a pinch of salt. Add the dry ingredients to the egg mixture.

Line a muffin tin with paper liners and fill each one with batter until about 1/4 inch from the top.

Bake one tray at a time in a preheated oven at 350°F (180°C) for 20–25 minutes, until golden brown.

While the muffins cool, prepare the pastry cream following the steps in the attached recipe. Let it cool.

Now, slice the tops off the muffins to create layers. Cut the removed tops into small cubes to use as decoration. To assemble: place the first layer with the liner, add pastry cream, then the second and final layer. Once all muffins are covered with pastry cream, top with the cubes from the muffin tops. And that's it!
