Ingredients

20–25 min baking, 10 min for cream, 10 min to assemble
Makes 10 muffins
  1. For Vanilla Muffins:
  2. 1egg
  3. 1/3 cupsugar (70 grams)
  4. 1/4 cupoil (56 ml)
  5. 1/2 cupmilk (125 grams)
  6. 3/4 cupall-purpose flour (100 grams)
  7. 1/2 cupalmond flour (50 grams)
  8. 2 teaspoonsbaking powder (8 grams)
  9. 1 pinchbaking soda
  10. 1/2 teaspoonturmeric
  11. 1 pinchcinnamon
  12. For the Chantilly Cream:

  14. 1 2/3 cupsmilk (400 ml)
  15. 2whole eggs
  16. 1/2 cupflour (60 grams)
  17. 1 cupsugar (200 grams)
  18. For the Chantilly:
  19. as neededSweetened whipped cream,
  20. For soaking:
  21. as neededMilk,

Steps

20–25 min baking, 10 min for cream, 10 min to assemble
  1. 1

    Make the vanilla muffins: In a bowl, beat the eggs with the sugar using an electric mixer until the mixture is light and fluffy.

    Add the oil, milk, and vanilla extract.

    In another small bowl, combine the flour, baking powder, baking soda, and a pinch of salt. Add the dry ingredients to the egg mixture.

    Line a muffin tin with paper liners and fill each one with batter until about 1/4 inch from the top.

    Bake one tray at a time in a preheated oven at 350°F (180°C) for 20–25 minutes, until golden brown.

    While the muffins cool, prepare the pastry cream following the steps in the attached recipe. Let it cool.

    Now, slice the tops off the muffins to create layers. Cut the removed tops into small cubes to use as decoration. To assemble: place the first layer with the liner, add pastry cream, then the second and final layer. Once all muffins are covered with pastry cream, top with the cubes from the muffin tops. And that's it!

    If you like, dust with powdered sugar. Enjoy!
