Palak Matar is a healthy combination of fresh green leafy spinach and green peas made into a curry. The sweet and delicious green peas combine very well with spinach and add munch & flavor to this dark green colored dish.
Steps

Wash and clean spinach thoroughly.

Transfer it in a pressure cooker and place the lid and cook till 2 whistles. Let it cool. Transfer it in a mixer and grind to a coarse paste.

Wash, peel, and chop onion. Grate the tomato and make a puree. Clean peas.

Heat ghee in a wok. Add cumin seeds and when cumin seeds splutter put finely chopped onions and fry till golden brown colour. Add grated tomato puree and cook till oil leaves the sides.

Add peas and cook on low flame till it gets softened.

Transfer spinach puree to this masala. Add salt, red chili powder, coriander seeds powder, and garam masala and mix well. Cook on low flame till it turns thick. Switch off the flame.

Serve hot with chapatti or rice.
