The Chinese New Year must eat - pineapple 🍍 tarts/cookie. Love this 3:2 ratio of ripe & unripe pineapple blends to form the paste for the tart bake.
Steps

Cut the skin & clean the pineapple eye then cut it into chunks piece.

Blend it into purée paste without adding any water. The smoothies the best.

Pour into microwave proof container. Left 1/3 space allowance for the pineapple boils while heating. Using the auto max power watt frm microwave to heat for 10mins.

Strain the pineapple juice, then put the purée back to microwave for another 10mins, strain it another time if find watery, then heat another 3-5mins(urge to check in between this heating round to prevent the purée get burn or dry)
If is not watery(like mine) it will look moist, refer last of photo below.
P/s: I felt the result n heating timing basically depends on microwave capacity.
(The pure juice extract don’t discard, can drink later or make jello) - 5
Ready a non stick fryer pan in medium heat, add cinnamon stick to fragrance. Pour in the moist purée, add in at least 10tbsp sugars, pan fry non stop stirring until all sugar melted, test and adjust the sweetness level, this pan fry process will just less than 15mins to produce the pineapple paste(See photo:)

P/s:
-If too watery can level up the heating power/fire but MUST keep an eyes in it n stir consistently as it could get burn or dry fast & lower the heating level too.
-If too sweet, can add some lemon juice to adjust.
