Ingredients

  1. 2.2 lbschicken, cut into large pieces (about 1 kg)
  2. Oil, as needed, for deep frying
  3. 1/2 cupplain yogurt (120 ml)
  4. 2 tablespoonslemon juice (30 ml)
  5. 1 tablespoonground coriander
  6. 1 tablespoonred chili powder
  7. 1/2 tablespoonground turmeric
  8. 1/2 tablespoonginger paste
  9. 1/2 tablespoongarlic paste
  10. Salt, to taste
  11. 2 tablespoonsred chili powder
  12. 2 tablespoonsvinegar
  13. 2 tablespoonschickpea flour (besan)
  14. 2 tablespoonscumin seeds
  15. 5whole cloves, roasted and ground
  16. 1 tablespoonfenugreek seeds, roasted and ground
  17. 4-5whole black peppercorns, roasted and ground
  18. 2black cardamom pods, roasted and ground
  19. 2 teaspoonscumin seeds, roasted and ground
  20. 1/2 cupmustard oil (120 ml)
  21. Lemon wedges and chopped cilantro, as needed, for garnish

Steps

  1. 1

    Make 2-3 deep cuts in each chicken piece so the marinade can penetrate. Combine all the ingredients listed above and mix well with the chicken. Let it marinate for 3-4 hours.

    After 3-4 hours, fry the chicken on medium heat. It will take about 15-20 minutes to cook through.

    Once the chicken is golden and crispy, remove it to a plate.

    Your fried chicken is ready. Serve with lemon wedges, chaat masala, sliced raw onions, and cilantro chutney. You can also enjoy it with your favorite sauce or chutney.
