This is a classic technique of preserving garlic for a long time in its own oil. Originating mainly from french cuisine, it is favourite with chefs when they need garlic oil or flavour of garlic. This way, garlic tastes delicious and you can use it in so many different ways! Try it and enjoy.
Steps

First, take a saucepan with lid or a slow cooking pot. Add garlic and sufficient oil to cover the garlic pods.

Keep on low flame and let it simmer on really low heat for an hour.

Check by poking a knife in a pod. If it comes out with the pod and the garlic can be pressed easily with fingers, it is done.

Switch off flame and let it stay covered overnight. Next morning, strain the garlic oil with the help of a strainer and coffee filter. You can add extra oil to the garlic if needed after straining the garlic flavoured oil.

You will have clear Garlic oil ready. Or you can let the garlic stay immersed in the oil and refrigerate in a glass airtight jar.

Enjoy whenever you feel like having it. Use on toast, chapati, pasta, tacos, rice..your choice.

Use the oil to flavour all your pastas, pizzas, rice, curry and salads. Enjoy.
