Rasmalai

Rasmalai is a classic Indian festive dessert made with milk, saffron, cardamom powder, cottage cheese. Basically it is a 3 step process , firstly curdling milk to make cottage cheese. Secondly, boiling the cottage cheese balls in sugar syrup. Thirdly, resting them in previously made rabdi and garnish with chopped nuts.

Steps

To make rabdi:
First boil 3 cups of milk to a heavy bottom pot. When that start to boil add saffron. Stir it every few minutes to avoid burning. - 2
After 10mins add sugar. Keep stirring and move aside the cream which comes on the top.

Then add 1/2tsp of cardamom powder. Stir well. Cook until the milk gets condensed to half of the quantity. Keep it aside. Rabdi is ready.

In another heavy bottom pot boil 6 cups of milk. Add vinegar or curd until the milk curdles completely. When milk will be curdled add 2-3 ice cubes to keep cottage cheese soft.

Drain it up in a thin cotton cloth and wrap up the cottage cheese in it. Then rinse it well under running water.

Squeeze peoperly to remove excess water in cottage cheese.

Take the cheese into a a plate and knead it well.

Make small balls from kneaded cottage cheese. After that, make small balls then flatten them inbetween your two palms very carefully. Keep them aside.

Bring 4cups of water in a pot. When water start to boil add 1 cup of sugar. Mix well. Stir until sugar gets melt in boiling water.

Add 1/2 tsp of cardamom powder. Stir again.

Add cottage cheese balls fastly into it. Cook for 10mins. not more than that. Otherwise balls will get hard.

Switch off the flame. Rest for another 15mins. Take out cottage cheese balls from it. Immediately add them in to the previously made rabdi..

Add chopped pistachios, cashews, almonds.

Rest for 3-4hr. Now our delicious Rasmalai is ready to serve. Enjoy the delicious Rasmalai.
