SPANISH VEGGIE OMELETTE - a wholesome breakfast / brunch paired with Banana and toasted bread.
Steps

Chop potato into small small cubes and marinade with salt for 10 - 15 minutes. This process is for faster cooking.

Finely chop tomatoes, chilli and assemble ingredients.

In moderately heated pan, add oil,add onion and sauté til pinkish then add squeezed potatoes + salt + green chilli and sauté for 7-8 minutes till potatoes is cooked.

In a mixing bowl break eggs, add salt + sugar + pepper powder + turmeric + milk and whisk well, now Add cooked potato + chopped tomato and mix well.

In moderately heated pan add butter, pour the egg mixture and spread evenly. Cover and cook for 4-5 minutes under low - medium flame, the surface starts firming, flip the other side with help of a plate and cook the other side for 3-4 minutes.

Omelette is cooked, let it cool down slightly and cut into pieces and serve.

Punch in between toasted bread or have it individually.
