Just before Holi, I had baked some Thandai Cupcakes. This Thandai Cupcakes is baked with thandai Thandai powder. It is a delicious treat for the Holi Party. Both kids and adults love them along with a glass of chilled Thandai. These eggless muffins come together in no time.
You can Bake them a day ahead, they stay fresh for a couple of days.

Firstly, heat 1/4cup milk, then add Thandai powder mix well and keep this mixture aside for an hour.

Further, Whisk sugar, butter and oil in the same direction until it becomes smooth and fluffy.
Then add thandai mixture and condensed milk whisk again for a minute.
Now, add curd and lemon juice whisk until everything incorporate. - 3
Mix all dry ingredients together by using Strainer. Now gradually add dry ingredients and remaining milk, mix it well with soft hand and make smooth lumps free batter.
Now add chopped almonds, Pistachios, rose petals and saffron strands (keep some for garnishing).
Mix and combine everything well. - 4
Pour the batter in Muffin cups and topped with some chopped pistachios, almonds, rose petals and saffron strands
And bake it in preheated oven at 170degree C for 25-30 minutes. - 5
Once the Muffins come to the room temperature, it is ready to serve. Enjoy your Holi with this mouthwatering baked Thandai
