Clean and dry your chicken with paper towels. Set aside

Make the herb butter by beating ingredients together with a fork or spatula until fully incorporated

Gently push your hands between the chicken’s skin and flesh to loosen but not tear. You only want to create room to place your herb butter. Trust me, it separates easily

With a little at a time, massage herb butter under the skin, ensuring it spreads evenly and the surface isn’t bumpy. Massage leftover herb butter over the outer skin

Add salt, pepper and a sprinkling of lemon juice on the chicken as needed

Roast in a preheated oven at 180C for 45 minutes or until desirably cooked and golden

Enjoy your herb chicken after resting it for 10 to 15minutes
