Spinach and Feta Rolls/ Buns

Spinach and feta rolls are a delicious treat which goes perfectly with a bowl of soup or as a side dish with your main meal. It can be even served as a snack with tea or coffee. Feta cheese and mozzarella cheese adds to the taste. Garlic butter on top gives a really nice flavour. It is an easy recipe which can be prepared by anyone.

Add yeast and sugar to warm water and keep it aside for 5 minutes. Mix together flour, salt and oil. Now make a dough using yeast water. Apply some oil on the dough and knead it for 2 to 3 minutes. Cover and keep it for 2 hours.

While the dough is resting, prepare the filling. Blanch spinach and squeeze to remove all the access water. Now chop it very finely. Heat olive oil in a pan and add garlic and onion to it. Saute it until translucent. Now add mixed herbs, chilli flakes, salt and paper to it and give it a good mix. Add spinach to it and cook it for 5 minutes on medium heat. Turn off the heat.

Now add crumbled feta cheese to it and let it cool down completely. Now add grated mozzarella cheese to it. The filing is ready. You can prepare the filling in advance and store it in the refrigerator.

Knock the air out of the dough. Roll it into a thin rectangle using some dry flour on the work surface. Now spread the prepared filling evenly on top. Now start rolling it from bottom to top. Now cut it into 10 equal pieces. Arrange all the pieces on a greased baking tray and leave it for 30 minutes to rise.

Brush it with little milk and bake it in the preheated oven at 200 degree for 30 minutes or until golden brown in colour. Take it out and let it cool for a while before serving.

To make the topping, heat butter then add chopped garlic, coriander leaves and salt to it. Cook for a minute and turn off the heat. Brush the topping over the rolls while they are still hot.

Serve spinach and feta rolls hot with a bowl of soup or as a side dish with your main meal.
