Ivy gourd or Tindli or Tindora, call it by any name, it tastes equally yummy. Dondakaya in Telugu and Donde in the local language here in the City is a favourite of many. An easy dish that can be made for Lunch or Dinner or even breakfast. It tastes yum with Chapatis or Phulkas as well and hence can be eaten for breakfast too. It has immense health and medicinal benefits. It protects the liver, boosts our immune system, eliminates allergies, helps remove fatigue since it has Iron in it. It helps in treating kidney stones and depression. Also controls blood pressure, blood sugar, and constipation. This little vegetable is such an immense treasure of life-saving properties and health benefits.

And this particular version of it is absolutely delicious and easy to make as well. With simple pantry staples and a few spices, it's absolutely done. The best part is that it is available all year around and can be relished throughout. I usually prefer it with any Indian Bread but sometimes do enjoy that with a steaming bowl of simple boiled Rice and Ghee.

Ingredients

25-30 minutes
4-5 servings
  • 2-3 tbspOil
  • 2-3thinly sliced Onions
  • 500 gmsthinly sliced Ivy Gourd
  • 2-3chopped ripe Tomatoes
  • 1 tspSalt
  • 1 tspGinger garlic paste
  • 1/8 tspAsafoetida or Hing
  • 2-3slit Green Chillies
  • 1small bunch chopped Coriander Leaves
  • 1 tspCoriander powder
  • 1/2 tspCumin powder
  • 1/2 tspTurmeric powder

Steps

25-30 minutes

    Wash and cut semi-thick round slices of the Ivy Gourd or Donde as it's called in the City. In a pan, heat some oil and add the ginger-garlic paste. Saute it for a few seconds and then add in the Asafoetida or Hing and the other ingredients as well. Now add in some chopped Onions. After they are translucent or light brown, add in the chopped Tomatoes and thinly sliced Ivy Gourd.

    Cover and cook on a low flame for 10-12 minutes. Do not overcook it. It should retain the crunch. And not to forget the fact that it will be done real quick. It will take almost 18 to 20 minutes in all. Stir fry it for a little longer duration if you prefer it to be crispier.

    Garnish with Coriander and serve hot. It goes very well with plain Rice. Serve hot as a delicious side dish to many important meals. Yum! Enjoy!
