Dalvada is Gujarat's famous street food and it is very popular, especially in Ahmedabad. This popular Gujarati snack is more consumed and enjoyed during monsoon with fried green chilies and freshly sliced onions with a cup of tea. It is like mandatory to have dal vada when it's raining even if it means to we have to wait in long queues to get it.
Though street vendors' dalvadas are undoubtedly tempting and tasty, we also can make the same at home. This crispy from the outside and spongy and soft from the inside, fried and flavourful snacks are irresistible and addictive.

Wash and soak dal with sufficient water for 4-5 hours at least. Once it is soaked, rub the dal with fingers, so most of the skin will come off. Almost 70% of skin should come off.

Then drain out the water and all floating skins. Then grind it into a coarse and thick batter. Add only 2-4 tbsp of water if required.

Then add ginger chili paste, asafoetida, and salt. Stir the batter vigorously in one direction so it becomes light and fluffy. This is a very important step. While stirring the batter turn on the heat, and let the oil heat on medium flame.

Then drop carefully vadas with a hand in heated oil. Keep stirring vadas with a slotted spoon so it properly fries from all sides.

Remove it on tissue paper. Serve hot with onions, fried green chilies, and tea.
